High-End Fundraising Gala
The Event: A high-end annual fundraising gala for a local non-profit. The client was interested in a buffet, but was worried it wouldn’t seem upscale. We proposed a station-style layout with different items available at scattered locations throughout the event. Additionally, several were action stations were included to allow attendees to further customize their selections.
The Menu:
Premium Hors d’Ouevres Selection:
- French Onion Stuffed Mushrooms with Grated Parmesan
- Balsamic Glazed Strawberries with Peppered Goat Cheese on Croustini
- Pesto Skewer with Cheese Tortellini, Mozzarella, and Tomato
Hand-Tossed Salad Action Station:
- Spinach and Arugula Salad with Dried Cranberries, Crumbled Goat Cheese, Toasted Pecans, and Lemon Vinaigrette
- Seasonal Field Green Salad with Cherry Tomatoes, Sliced Cucumbers, and Calamata Olives with Scratch Buttermilk Ranch
Signature Silver Chafer Buffet:
- Chicken Tenderloins in Mushroom Dijon Cream Sauce
- Sauteed Wild Rice with Water Chestnuts and Herbs
- Sugar-Seared Broccoli Spears
Block-Cut Peppered New York Strip Carving Station:
- Grilled with Peppers and Herbs, and sliced to order
- Served with Dollar Rolls, Cabernet Cherry Chutney, and Creamy Horseradish Sauce
Tuscan Pasta Action Station:
- Farfalle and Whole Wheat Penne finished to order with your selection of accompaniments
- Selections include Chicken, prosciutto, seasonal vegetables, and our signature spinach pesto and marinara sauces
Summer Favorites Dessert Station:
- Flourless Chocolate Decadence Bites with Strawberry Cream Cheese Icing
- Classic Key Lime Bars
- Crumbled Bacon Chocolate Bars
